Ragi-Wheat Dosai - Quick fix breakfast

It's always hard for us to think of a balanced diet and breakfast has to be the biggest meal of the day. So my mom decided to make this quick fix recipe loaded with proteins while we are busy getting ready for work. Every time I dig into this breakfast I thank God for gifting mankind with such rich food and mothers who make it come to the table. 


RAGI-WHEAT DOSAI



Ingredients:
  • 1 cup wheat flour
  • 1 cup ragi flour
  • 1/2 cup rice flour
  • 1/2 cup roasted ravai/sooji
  • 1/2 cup chopped coriander
  • 7 - 10 curry leaves
  • 2 onions medium sized finely chopped
  • 2 green chillis finely chopped
  • 3 tbsp Oil
  • 6 - 7 cups water
  • salt as needed
Method:
  • Heat oil in a pan. Saute the onions, chillis, curry leaves and coriander till the aroma is released.
  • Now mix all the flours together in a large deep bowl. 
  • Pour water slowly and mix to a thin consistency. 
  • Toss in the onions and salt. Mix well. 
  • Heat the tawa on medium flame, coat with oil. 
  • Pour a ladle of the batter from outside of the pan so that it spread to the centre.
  • Don't give up if your shape looks like a continent, keep trying it's a matter of few dosais away :)
  • Flip over when the base gets slightly crispy and cook well on both sides.
  • Add a dollop of ghee or butter and serve it piping hot with mavadu pickle, mangad chicken curry or onion chutney
